Here we take the bounty of summer berries and stew them down into a delicious preserve. To compliment we make a pastry cream with whole milk from Eby Manor in Waterloo, and season it lightly with maple. Both are piped inside a Butter croissant then Topped with crumbled freeze dried raspberries.
