THE BENCHMARK.

a constantly evolving blend of local grains , Canadian salt , and water. Featured in this loaf is a base of bread flour grown by local Mennonite farms around Howick, Ontario. In addition, whole grains from Ironwood Organics (Gananoque, ON) & Stone milled Rye from 1847 Stone Milling (Fergus, ON)

This bread is mixed and ferments very slowly for 36-48 hours yielding a supreme flavor , texture and digestibility.  

Ingredients: a Blend of freshly milled Ontario Wheat Flours,Rye, Canadian Sea Salt, Water, Wild Yeast Culture

I would like to say that this is the Best of the best sour dough bread that I have tasted, and I have tried many. I am so pleased to be able to order and pick up such quality bread made with such a labour of love. Also the pastries are all so amazing and delicately made to perfection.
Each one is unique in taste my favourite is the hazelnut one.
